Abstract
In recent years, food allergy has gained considerable importance both to the public opinion and medical area. To date no reliable data are available on the real prevalence of food allergy that is the disease most commonly self-diagnosed by patients with experience of adverse reaction to a food. Moreover, the misperception of allergies compared to other reactions, contributes to an overestimation of the problem. Unlike what happened to aeroallergens, the identification and characterization of food allergens has not lived up to the synthesis of useful extracts for specific immunotherapy and therefore, after diagnosis, the only form currently available prophylactic treatment is completely avoid the food involved. To reduce the risk exposure of consumers with food allergies, a joint effort by all institutions involved is necessary and requires a careful risk assessment based on established scientific knowledge.
