Abstract
Plants are rich sources of natural antioxidants, which play a vital role in the prevention or progression of the degenerative diseases. The consumption of fruits, vegetables and herbs rich in antioxidants is associated with a decline in the incidence of degenerative diseases and cancer. Antioxidative enzyme, superoxide dismutase (SOD) plays a key role in the scavenging of activated species such as superoxide and hydrogen peroxide. Superoxide dismutases (SODs) include: copper-zinc-, manganese- or iron- containing SOD, isozymes, and each of them is placed into plant cell: cytosol, chloroplast, mitochondria and peroxisomes. The extraction is very important step which precedes estimation of enzyme activity. The most used assays for determination of SOD activity were developed by McCord and Fridovich (1969) and Beauchamp and Fridovich (1971). SOD is of great importance in the antioxidant system of people. SOD has multiple pharmacological activity, anti-inflammatory and cosmetic activities. Also, the presence of SOD in plants is very important and its quantity is a measure of the antioxidant properties of plants. In this review have been given the results of the determination of SOD in various plants and impact of different factors and agents on that activity.
