In connection with the development of antioxidants to prevent aging of fats and oils due to oxidation and the resulting accumulation of toxic substances, the chemiluminescent method was used to determine the kinetic parameters of inhibited oxidation by various antioxidants. Using swine fat and the antioxidants butyloxytoluol, 2,4,6-tri-tert-butylphenol, 2,2-methylenebis(4-ethyl-6-tert-butylphenol), butyloxyanisole and alpha-naphthol, a correlation was found between antiradical and antioxidative activity of the inhibitors. Antiradical activity of the inhibitors of oxidation was quantitatively determined by the product of the constant of the rate of interaction of the inhibitor with the peroxy radicals and the stoichiometric coefficient of inhibition. The method was approved for use in selection of antioxidants for fats and oils.
