Fatty acids and triglycerides of fruit oils from Cyperus esculentus and Balanites aegyptiaca

Tiger nuts (Cyperus esculentus) - red and black Varieties - and dates (Balanites aegyptiaca) were analysed and found to contain respectively 270, 158 and 440 g kg(-1) lipids of highly unsaturated fatty acid profile. The fatty acid contents ranged from 15.0 to 17.9% for palmitic acid, 4.2 to 6.9% for stearic acid, 33.5 to 69.6% for oleic acid and 10.3 to 43.6% for linoieic acid. Analysis of triglycerides showed triolein (27-33.5%) and palmitodiolein (25%) as the main (60% of total triglycerides) triglycerides in tiger nut while palmito-oleolinolein (18.7%), oleodilinolein (13.8%) and palmitodiolein (13.7%) were the main triglycerides in the dates.
