Abstract
The pK(a) and stability constants of selected curcumin analogues, including demethoxycurcumin, were studied in dioxane/water 75:25 (v/v), and these results were compared with our earlier studies. Compounds with beta-tricarbonyl structure show comparatively low pK(a) values. The only compound with merocyaninic character shows a moderate high pK(a) value in agreement with its particular physical properties. Repeated pK(a) determinations for curcumin under different conditions reveal that the first proton's splitting off in alkaline medium occurs at the phenolic group. PPP calculations qualitatively support the results of these potentiometric experiments.<
