Abstract
Peeling removed from potato (Solanum tuberosum) tubers of both raw and cooked were analysed to know about their composition. Significant occurence of nutrients in the potato peel waste have been recorded. Raw potato peel waste was found to contain higher amount of most of the physico-chemical constituents than the cooked potato peel waste. Elementary analysis indicated that except for copper there is no loss of Mn, Zn, Pb and Cd in the cooked potato peel waste. © Global Science Publications.
