The transesterification of powdered soybean phospholipids and hydrogenated soybean oil catalyzed by lipase in hexane were studied in this paper. The effects of different parameters, including variety and amount of lipase, substrate molar ratio of hydrogenated soybean oil to powdered soybean phospholipids, temperature and the reaction time, were evaluated by single factor method test according to the changes of iodine value and yield. Furthermore, the process parameters were optimized by orthogonal experiment. The optimal conditions were predicted as follows: reaction temperature 50 ℃, reaction time 24 hours, amount of phospholipase A1 25% (% m/m of phospholipids), substrate molar ratio 4:1, soybean phospholipid concentration 0.20 g/mL, and the optimal actual yield 72.9%. The iodine value of the modified phospholipids was reduced to 52 g/100 g from 89 g/100 g compared to that of the powdered soybean phospholipids. Moreover, the contents of fatty acids of modified phospholipids changed dramatically, in which the content of stearic acid was 9 times of that of raw material and the contents of linolenic acid and linoleic acid fell to around a half. © 2020, Dept. of JCCOA.
